having completed a degree previously in Spain?
I have heard that for spanish architects with some proved experience
it is much easier?

In my opinion the best thing you can do is call the arb, http://www.arb.org.uk/ and they will explain you perfectly what you have to do. I've been told is possible to get it proving 2 years experience. At the moment I can get the Part 2, which is the equivalent for the spanish qualification without experience, but due to I have almost two years of experience, I will try to get the Part 3.

If you are a registered architect in Spain talk to ARB. No need to do any further studies... The EU is not that bad after all...
The Part 3 is an academic qualification which is asked for applicants through the UK route to registration, rather than a status which arises as a consequence of registration. It's not for registrants making use of the European route.
Having registered, your status will be that of "architect" in line with all those on the register. There isn't a special designation for those who have or have not completed a Part 3.

I haven't ever heared of RIBA. What is it? (and what is it for?) I'm reading your posts and seems to be something that could allow me to work in the UK making the most of my qualification in Spain. Is that true?

There's no need to be registered in RIBA. You only have to be registered in the Architectural Registration Board (ARB) to work as an architect in the UK.
